Tuscany, wine land. The heart of Tuscany has always been known for its gift to produce high quality superior grapes. It could not have been otherwise, thanks to its sandstone and alberese grounds, to the hills altitude, sometimes sweet sometimes sharp and to the warm summer sun. In this land the Sangiovese vine expresses itself in all its elegance and strenght. For us farming is a tradition! If it true that the land noble spirit is converted into the velvety wine body, it not only a matter of nature. It is also thanks to the vine-dresser's passion and experience, who follow the vines throughout their complete growth, in addition to the law provisions which impose severe selective controls, that we can achieve such important superior and famous wines, known in the entire world, as for instance "Chianti classico" by the "Consorzio Gallo Nero", the "Sassicaia" of Bolgheri, the "Brunello di Montalcino", the "Morellino di Scansano" and many others.

The grape harvest is carried out when the grapes sugary content is in such a quantity to be able to obtain from it a wine with a certain alcoholic degree. The wine grower, who knows its grape and knows the right period for the harvest, both through the tasting and the grapes colour. Still nowadays the grape harvest is carried out by hand. The baskets full of grapes are downloaded or piled up on carts in order to be delivered in those places where the wine is made.
Besides the traditional wine-makings, sometimes in Tuscany is still used the technique so called "di governo alla Toscana", consisting in a double fermenting process with two different musts from the same grape. During the grape harvest a certain amount of perfect mature and healthy grape is selected, which is then settled in appropriate venues where it is left to slightly wilt, while in the meantime the other harvested grape is wined normally. Afterwards, in December, or in spring , the partially wilted grape is pressed, thus obtaining a must which is then added to the new wine. In the mixture obtained there is therefore a slow fermenting, which lasts some months, thus leading to a sparkling and soft wine, since it contains just a little tannic saur.

A GLASS OF RED WINE IS HEALTHY!
This is a statement we have often heard about, at least the ones grown in tuscan country lands and it sounded as a good excuse to drink huge quantities of this tasty drink.
But now the modern scientific research seems to agree with us.
Some australian scientists reached the outcome that red wine decreases lipids. Previous studies had shown the qualities of the wine, but without explaining the reasons. Now they found out that the wine elements act in a similar way of the anticholesterol medicines, thus preventing fat heaps within the heart circulating system.
