The Swine Salami is manufactured with first class traditional swine breed meats, coming from animals bred in almost wild status and fed exclusively with natural products like maize, barley and broad beans, grown within the farm.
The processing is strictly performed with handicraft methods, according to the ancient tuscan traditions, by using a natural gut, back lumps and stringed by hand. Seasoning minimum 3 months.
It shows its typical coarse grain and emphasized lump. The latter is cut by hand and comes from the back of the swine, since it is more tasty and consistent.
Swine Salami is compact but soft and delicate thanks to the peculiarity of the meats used. Its taste is definite and delicate at the same time. It is one of the most typical tastes belonging to the tuscan tradition.
