Copocollo sausage is one of the most traditional product in central Tuscany, manufactured with first class meats.
It is the part of the swine located between head and body, called also coppa (cured neck of pork) and which is represented by a slice of lean meat with clear fat strings, soft and juicy.
After a trimming by hand, the slice of meat called Capocollo is salted and spiced and then left to rest. After some days the Capocollo is made into sausage in a natural gut and stringed by hand. Seasoning of about 3 months.
Capocollo is a superior high quality sausage with soft and delicate taste, slightly sweet.
