It is a unique pecorino cheese, fragrant, rich and robust because improved and refined thanks to the ageing processed into a 18th century tuff cave.
After a short ageing in factory, pecorino is kept inside the cave for a minimum of 90 days, at even temperature,regularly turned over and rubbed with olive oil lees.
Its distinctive flavour is the result of the raw milk manufacturing; at the end of the ageing process texture is compact and slightly crumbly and the stay inside the cave gives pecorino its characteristic "under wood" fragrance.
Delicious any time with hearty red wine.
