FOPE0025 - Metello's pecorino cheese, 2,2 Kg
It is a peculiar pecorino in our wide range of products,and we make very limited quantities because of such long ageing.
After a short stay in factory it is left in a cellar for 4 months; the cellar is situated at Metello Garfagnana,our village of origin, a mountain 1000 metres high.
The peculiar ageing process gives pecorino a unique flavour.
Metello's rind golden yellows turns to red after a few months; the straw-coloured texture is compact, mellow, a bit oily and smells almond.
In mountains they serve it with polenta and potatoes bread, pears and necci (chestnut fluor pancake cooked in special "necci" red hot baking trays.
When mature and aged is grated on the top of tortelli and soup.
Delicious with broad beans too, but this is a town way of behaving: nobody grows beans in the mountains.
Serve it with excellent Tuscan wine.
