"Oleum" is the extra virgin olive oil more appreciated. The used olives are plucked as soon as they start the maturation, the inside pulp doesn't have to be still mature and must have a grassy perfume, of green fruit. The grinding process at low oxidation starts with a delicate process of olives pressing through a double continuous crusher grate with the passage of the olives in closed ripples to not oxidize the olives pasta, it ends with the extraction of the oil, all in low temperature continually checked. The result is exciting, this extra virgin olive oil emits on every dish a clean odor and taste of fruit and maintains its characteristics for more than 2 years. Don't expose it to direct light; don't freeze it; in summer you can preserve it in a fresh place and Oleum will make unique your dishes.

This oil from our hills is the genuine product of olives crushed using the traditional system of a millstone. The quality of the olives, picked from the tree and not from the ground and the method of crushing characterise the quality of the extra virgin olive oil, appreciated since time began for its composed, expansive fragrance, for its sour taste which makes it suitable for seasoning any dish and even giving flavour to a slice of bread. To produce high quality extra virgin olive oil in Tuscany means above all giving importance to all the characteristics of the fruit in the finished product. For us, producing a slightly piquant extra virgin olive oil with notes of artichoke and apple, a touch of bitterness and an intense green colour means keeping up a tradition.
