Nicole 2005’s deep ruby red introduces sensations of red fruits. Entry on the palate is weighty and elegant. The tannins are assertive but nicely offset by the sweetness of complex, long-lingering fruit. An excellent wine to partner with pasta dishes, meat or as an aperitif.
The entire vinification process was reviewed with the aim of producing more elegant wines that would reflect our terroir as faithfully as possible. A first major change in our vinification protocol was to eliminate pre-fermentation low-temperature skin contact. After bunch selection, the destemmed and crushed grapes macerated at ambient temperature for a period of time that varied from twenty-four to forty-eight hours. Inoculation with cultured yeasts was restricted to fewer than half of the must lots fermented. This enabled us to assess the advantages of inoculation with native yeasts and compare them with vats treated with cultured yeasts. Pumping over was eliminated and replaced by manual punching down and rack and return only. The aim is to extract skin compounds more gently and avoid violent intervention.
The grapes were harvested in the second and third week of September and then vinified in wooden vats. After fermentation, the vats remained closed as vinification continued with maceration on the skins. An average of twenty-eight days passed from the arrival of the grapes in the cellar to devatting. It spent the next twelve months in large wooden barrels with capacities of 40 and 50 hectolitres. Nicole 2005 went into bottle on 21 December 2006 without fining and after light filtration. The 2005 vintage yielded 18,000 0.75-ml bottles and 100 1.5-l Magnums.
