The Acacia tree (Robinia Pseudoacacia) blossoms in may, its honey is picked in June.
The color of Acacia honey is one of the lightest, of liquid consistency, it keeps liquid for long time no matter temperature or freshness ( rarely it crystallizes). The odor is light of dim intensity, lightly floral , it can remind of the acacia flowers scent, its very sweet and delicate flavor reminds of sugared almond vanilla.
As for as its composition , its main feature is the hight contenut of fructose responsable for the liquid features and the high sweetening power.
The acacia tree honey is used mainly as sugar, as it doesn’t change the flovour of food, and it goes very well with seasoned cheese, boiled meal and park sausage.
