The chest nut (
castanea sativa
) blossoms in June/July and its honey is picked at the and of July.
The Chest nut honey color is dark, going from brown-red to black , rich of fructose it rarely crystallizes, only after a long time. The strong and deep odour, aromatic and prickly, reminds of dry wood and tannin. The flavour is not very sweet and it leaver a light hitter taste, the flavour is similar to the odour and it is very persistent.
This honey is perfect for sampling food, it goes well with strong meat, seasoned cheese and fresh sheep’s milk cheese.
