FOPE0024 - Pecorino "di Fossa", 1 Kg
It represents the union between a pecorino cheese of ours and an extraordinary traditional method of refinement. It is secluded in tuff pits at Sogliano sul Rubicone of Romagna.
This particular kind of pecorino cheese will face a unique ageing and manufacturing,a combination of our and Sogliano's Seasoners experience.
Aged 3 months in factory, the moulds are then packed into sacks and buried in the month of August; at the end of November, on St Catherine's day, we dig them up.
The pits, very old barns, are sealed so to guarantee even temperature and high humidity.
A second fermentation generating sharp fragrances and distinctive full flavour.
Straw-coloured, flaky and crumbly texture. Hard to explain but it is a superlative cheese, it pairs with honey, jam, wine jelly, apples, pears and dry fruit.
Serve it with honey and raisin wine. A great dessert for an important dinner.
